Food Safety Qualifications – The law requires that all food handlers need to be trained according to their food handling work activities. Should an employee achieve an  accredited Food Safety qualification from ForthWright Training, which is suitable for the work they do, it will assist food business operators in proving that they have displayed due diligence and are therefore compliant in the eyes of the law.

FORTHWRIGHT TRAINING

Award in Food Safety for Catering / MANUFACTURING / RETAIL – Level 1

This qualification is ideal for anyone working in the catering and hospitality industry (or those about to start work in the industry).

  • An awareness of hazards and controls associated with food in catering operations.
  • Contamination prevention.
  • Temperature abuse of food and the importance of thorough cooking and rapid cooling.
  • Personal hygiene.
  • Cleaning and disinfection.

This qualification is usually achieved by taking a half-day classroom-based course. Certified by HABC

Previously known as “Basic” or “Foundation” Food Hygiene this course offers fundamental food hygiene knowledge for all food handlers.

The qualification covers the following topics:

  • Legislation
  • Food safety hazards
  • Temperature control
  • Refrigeration, chilling and cold holding
  • Cooking, hot holding and reheating
  • Food handling
  • Personal hygiene
  • Safe food storage
  • Cleaning
  • Food premises and equipment

Course duration – 6 hour programme
Assessment method – 30 question multiple choice paper

Award in Food Safety for Catering / MANUFACTURING / RETAIL – Level 3

Those who operate in a supervisory role in the workplace need to be aware of their responsibilities with regards to food safety. Most food poisoning outbreaks can be traced back to the failure of those responsible for communicating and implementing hygiene standards.

These qualifications ensure that supervisors are aware of the legislation applicable to food safety and how best to communicate the required standards to employees.

An essential element of high food safety standards in any business is the ability to motivate, train and supervise staff to ensure they are competent food handlers. The relevant and practical style of the Level 3 Qualifications will ensure that supervisors have the confidence to lead by example, encourage good hygiene practices and take appropriate corrective action to make sure that all food activities are safe. On achieving any of these qualifications, competence to supervise others safely can be demonstrated.

This qualification is usually obtained by taking a 3 day classroom-based course.

It is assessed by a multiple-choice examination, where the candidate must answer at least 40 out of 60 questions correctly. A Merit is awarded to candidates scoring 50 or more. The examination will take a maximum of 2 hours to complete.

Course duration: 4-6 hours depending on experience

  • AED’s – what are they?
  • The Chain of Survival
  • Basic life support
  • Emergency Action Plan
  • Resuscitation (CPR)
  • The Heart
  • Recognition of Angina and Heart Attack
  • Safety Considerations and accessories
  • Demonstration and practice of using an AED
  • Choking

On completion of CPR training, the candidate should be able to demonstrate resuscitation of an adult in cardiac arrest. This should be assessed during or at the end of the training, using a simulated incident and a resuscitation training manikin.
